Strawberry Pocky Cake

I’ve been wanting to make a Pocky cake since forever ago! I this they are the cutest cakes in the universe. If you guys haven’t noticed, I’m a huge anime nerd. If you’ve watched any anime in your life you would know what a Pocky is. For those of you who don’t know a Pocky is a cookie biscuit dipped in chocolate. They’re super yummy! 



Prep: 15 min

Bake: 40min

Decorate: 30 min

Strawberry cake 

Ingredients:

  • 2 cups white sugar
  • 1 (3 ounce) package strawberry flavored Jell-O®
  • 1 cup butter, softened
  • 4 eggs (room temperature)
  • 2 3/4 cups sifted cake flour
  • 2 1/2 teaspoons baking powder
  • 1 cup whole milk, room temperature
  • 1 tablespoon vanilla extract
  • 1/2 cup strawberry puree made from frozen sweetened strawberries
  • 6 strawberry pocky packs *for decoration*

 

Directions:

  1. Preheat the oven to 350 degrees F. Grease and flour two 9 inch round cake pans.
  2. In a large bowl, cream together the butter, sugar and dry strawberry gelatin until light and fluffy.
  3. Beat in eggs one at a time, mixing well after each.
  4. Combine the flour and baking powder; stir into the batter alternately with the milk.
  5. Blend in vanilla and strawberry puree.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 30 to 45 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow cakes to cool in their pans over a wire rack for at least 1 hour before decorating
