Gingerbread ice cream cookie sandwiches and bowls 

It’s the most wonderful time of the year, December! The only time of the year when its socially acceptable to be super cheery for no reason.

Lately I’ve been craving something Christmas-y but also cold. I know what you’re thinking. Who wants to eat something cold in December? Hold your criticism and let me explain. Considering that I live in Southern California it doesn’t really get cold here. I wanted to create a recipe that reminded me of December is like in the east coast, Christmas-y and Cold! Thus the mixture of gingerbread cookies and ice cream came to be.

Gingerbread cookies Ingredients:

1 cup light brown sugar
1 cup (2 sticks) unsalted butter, softened
1 cup molasses
2 large eggs
5 cups unbleached all purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ginger
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon cloves
1/2 teaspoon nutmeg


  1. Cream the butter and sugar on medium speed until light and fluffy
  2. Add the molasses and mix until combined
  3. Add the eggs, one at a time, scraping the bowl in between each egg
  4. Slowly add flour, salt and spices to the butter mixture
  5. Mix on low speed until dough forms
  6. Split dough into two pieces, wrap in plastic and chill for one hour
  7. Cover hands, countertop, and rolling pin with flour
  8. Roll out first dough piece and cut out shapes
  9. Roll out second dough piece and grease muffin pan
  10. Place dough into muffin pan
  11. Freeze for 15 minutes
  12. Bake the cutout cookies at 350 degrees for 10-12 minutes
  13. Bake cookie bowls at 350 degrees for 12-15 minutes


Ice cream sandwiches and bowls

What you need:

  • Gingerbread cookies and bowls
  • 1 tub of ice cream of your choice
  • Sprinkles in a shallow bowl
  • cookie cutters


  1. Let the cookies cool completely
  2. Spread the ice cream into a square pan
  3. Cut out the ice cream with the cookie cutters
  4. Place ice cream onto the cutout cookies
  5. Dip the ice cream sandwiches into a shallow bowl of sprinkles
  6. Scoop a dollop of ice cream for the gingerbread cookie bowls
  7. Freeze for 15 mins until harden
  8. Serve & Enjoy!

*Be sure to work quickly! The ice cream will melt fast!
