Pumpkin Spice Cupcakes

It’s never too late to make pumpkin any thing! October may have passed but that dosent mean its still not fall.

This recipe and decoration are from the Hello, Cupcake! cookbook. The very first cookbook I’ve ever owned! This cookbook was the start of my love of baking. I remember flipping through it of hours upon hours and dreamed of baking everything I see.  Now I finally can!

Prep Time: 30 mins

Bake Time: 45 mins

Decorating Time: 1 hour

Total time: 2 hours, 15 mins


Pumpkin Spice Cake:


  •  1 box yellow cake mix
  • 1/2 canned pumpkin purée
  • 1 teaspoon pumpkin spice
  • 4 eggs
  •  3/4 cup buttermilk
  • 1/3 cup vegetable oil


  1. Pre heat oven 350 degrees
  2. Pour the cake mix into a bowl and stir into a fine powder
  3. Add the eggs one at a time *helps if the eggs are at room temperature*
  4. Add 1/2 can of pumpkin purée, vegetable oil, buttermilk, and pumpkin spice
  5. Mix thoroughly
  6. Pour the batter into cupcake liners
  7. Bake for 30 – 45 mins


Pumpkin Decoration:

What you need

  • Orange Sprinkles
  • 4 green twizzlers
  • 2 cups Orange frosting (put 1/2 cup icing aside)
  • Toothpick or skewer


  1. After the cupcakes completely cooled, pipe a swirl of icing
  2. Smooth the icing swirl into a dome shape
  3. Dip the iced cupcake into the orange sprinkles
  4. Use the toothpick to form six crossing lines to form the intents of a pumpkin
  5. Put the 1/2 cup of icing into a zip lock bag and cut a small hole
  6. Pipe out the icing over the intents
  7. Cut 1/4 inch of a green twizzler
  8. Place the twizzler on top of the cupcake where all the lines connect
  9. Repeat for all the cupcakes
  10. Serve & Enjoy!
